Coriander, also known as dhania in India, is widely used in a variety of regional cuisines to flavour curries, stir fries, snacks, breakfast items, and so on. It is popular in Mexico and the southwest United States, where it is used in everything from salsas and mixed greens to burritos and meat dishes. While fresh leaves are commonly used as a garnish on most dishes, the seeds and a ground powder (masala) are also used in cooking. Because heat quickly diminishes the flavour of the leaves, they are frequently used raw and added to the dish just before serving.
