The dried latex (gum oleoresin) secreted by the rhizome or tap root of various species of Ferula, perennial herbs reaching 1 to 1.5 m (3 to 5 ft) tall, is known as asafoetida (/aesftd/; sometimes spelled asafetida). They belong to the Umbelliferae family of celery.
