Ajwain’s small, oval-shaped, seed-like fruits are pale brown schizocarps that resemble the seeds of Apiaceae plants like caraway, cumin, and fennel. They have a bitter, pungent flavour that is similar to anise and oregano. They smell almost identical to thyme because they contain thymol, but they are more aromatic and less subtle in flavour, as well as bitter and pungent. Even a small number of fruits can overpower a dish’s flavour.
